The secret ingredient is aquafaba, which is the leftover juice in a tin of chickpeas. Just make sure you find unsalted chickpeas.
Don’t fret, this doesn’t taste of chickpeas! The sugar turns this weirdly wonderful juice into a lovely sweet meringue.
