‘Milanese’ has several meanings, but it’s commonly used to describe meat coated in breadcrumbs and fried.
For this glorious sandwich, we use breaded oyster mushroom clusters, which we cook in an air fryer (you can shallow fry, if you prefer) and combine with a simple tomato sauce, vegan parmesan and rocket.

Notes:
We love to cook the breaded oyster mushrooms in our air-fryer for healthier results, but you can also shallow fry them in oil if you prefer.
You’ll want to find oyster mushrooms in clusters, rather than individual caps. We then break down the clusters into 4 smaller evenly-sized clusters, which are about the same size as the palm of our hands.
We use really flakey panko breadcrumbs, which create an extra crunchy coating. You might need more or less panko breadcrumbs depending on how flakey they are, so it’s best to have a little extra lying around if necessary.
Mushroom Milanese Sandwich

Ingredients
60g (1/2 cup) plain flour, plus extra for coating
1 tsp dried oregano
salt + pepper
140g (1.5 cups) panko breadcrumbs, see notes
200g (7oz) oyster mushrooms, broken into clusters (see notes)
olive oil
3 garlic cloves, peeled + chopped
1 x 400g (14.1oz) tin of chopped tomatoes
1 handful of fresh basil, chopped
1 ciabatta
2 large handfuls of rocket
vegan parmesan, grated (optional / to serve)
Method
In a bowl, combine the 60g (1/2 cup) of flour with 120ml (1/2 cup) of water, the oregano and pinches of salt and pepper to create a smooth batter. If the batter is too thick, add an extra splash of water, then set aside.
Add a few tablespoons of flour to a separate plate, then add the breadcrumbs to a separate bowl.
Dip one of the oyster mushrooms into the flour until it’s fully coated, then submerge it in the batter. Shake off any excess batter, then fully coat it in the breadcrumbs and leave to one side. Repeat for the remaining mushroom clusters.
If you’re using an air fryer, spray the basket a couple of times with oil, add the breaded mushrooms, then give them another couple of sprays with the oil. Cook for 14-18 minutes at 180°C / 350°F or until golden and crispy all over, turning halfway.
Meanwhile, add a splash of olive oil to a frying pan on a medium heat. Add the garlic and cook for 2 minutes until they begin to turn brown, then add the chopped tomatoes, pinches of salt and pepper, then simmer for 10-14 minutes or until the sauce thickens. Next stir in the basil, then set aside.
Slice the ciabatta in half lengthways, then slice it in half again so you end up with 4 equal-sized pieces. Spoon the tomato sauce over the bottom halves, then place the breaded mushroom clusters on top, followed by some grated parmesan and the rocket. Add the ciabatta tops, then slice the sandwiches in half to serve.
