15 Minute Chipotle Breakfast Bap
For this high-protein twist on the breakfast bap, we use chipotle for extra spice and Cajun seasoning for a smoky, peppery flavour.
Ingredients
Ingredients
- olive oil
- Cajun seasoning
- tin of black beans
- silken tofu
- chipotle paste
- salt + pepper
- cherry tomatoes, quartered
- fresh coriander, roughly chopped
- limes, juiced
- baps or rolls, cut in half (or gluten-free bread)
Method
- 1
Heat a drizzle of oil in a saucepan over a medium heat. Add the Cajun seasoning, fry, stirring for 30 seconds, then drain one can of black beans and add it to the pan and add the other can of beans along with it’s liquid to the pan. Give everything a good stir then leave the beans to bubble away.
- 2
Add the tofu to a large frying pan, then use a wooden spoon to break up the tofu and form a scramble.
- 3
Next add the chipotle paste and pinches of salt and pepper. Fry over a high heat for 5 minutes until beginning to crisp in places.
- 4
Mix together the tomatoes, coriander, juice of 1.5 limes and 2 tablespoons of olive oil in a small bowl. Season the salsa to taste.
- 5
Next mash the beans with the remaining lime juice and season to taste.
- 6
Now assemble the baps. Spoon the refried beans onto the bottom, top with the chipotle tofu and the salsa. Sandwich together to serve.
