5 Ingredient Christmas Ginger Biscuits
All you need are 5 simple ingredients and your fav Christmas pastry cutters to create these super easy and delicious ginger biscuits.
Ingredients
Ingredients
- dark muscovado sugar
- vegan margarine
- plain flour, plus extra for dusting
- baking powder
- ground ginger (ginger powder)
- icing sugar, (optional)
Method
- 1
Add the sugar and margarine to a large mixing bowl and cream together until fully incorporated.
- 2
Add the flour, baking powder and ground ginger and stir to combine until a dough forms.
- 3
Roll the dough into a ball, wrap it in baking paper or cling film and refrigerate for 30 minutes.
- 4
When you're ready to bake the biscuits, preheat the oven to 160°C fan / 350°F and line two large baking trays with baking paper.
- 5
Lightly dust a work surface and rolling pin with flour then remove the dough from the fridge and roll it until it's around 8mm (1/3") thick. Use your favourite pastry cutters to cut out the biscuits. Re-roll and continue cutting out the biscuits until all the dough is used up.
- 6
Gently transfer the biscuits to the lined baking tray leaving some space between each one.
- 7
Bake in the oven for 15-18 minutes or until slightly golden. The cookies will harden once they cool outside of the oven.
- 8
Remove the biscuits from the oven and leave them to cool fully. To finish, dust the biscuits with icing sugar.
