Apple + Cinnamon Cake
We believe having a healthy attitude to food involves the occasional treat, such as this delicious apple and cinnamon cake. It's a wonderfully indulgent dessert, which is simple and comforting - and it really is the perfect treat!
Ingredients
Ingredients:
- unsweetened soy milk, plus extra for the icing
- lemon juice, see notes
- Granny Smith apples, see notes
- plain flour
- golden caster sugar
- baking powder
- unsalted vegan butter , melted
- vanilla extract
- icing sugar or confectioners sugar
For the cinnamon swirl:
- light brown sugar
- ground cinnamon
- unsalted vegan butter, melted
Method
- 1
Preheat the oven to 180°C fan / 400°F and line the base and sides of an approx. 19cm (7.5”) square cake or brownie tin with baking paper.
- 2
In a jug combine the milk with the lemon juice and leave to sit while you carry out the next steps. This is your vegan buttermilk.
- 3
Peel the apples, remove and discard the cores, then dice the apples into 1cm (0.5") pieces.
- 4
In a large mixing bowl combine the flour, sugar and baking powder. Next add the melted vegan butter, vanilla extract and the buttermilk from earlier, then stir until you have a smooth batter.
- 5
Add the diced apples to the mixing bowl and stir again until they are fully incorporated.
- 6
Now transfer the batter into the lined baking tin.
- 7
Next, combine the swirl ingredients in a small bowl until smooth. Then drop spoonfuls of the cinnamon mixture all over the cake batter. Now use a knife to swirl the cinnamon layer into the cake batter layer.
- 8
Bake in the preheated oven for 40-45 minutes or until the cake batter is cooked. Check with a toothpick to be sure.
- 9
Mix the icing sugar with 4 tablespoons of plant-based milk until smooth. If necessary, add a splash of extra milk if the icing is too thick, then pour the icing all over the cake.
- 10
Serve warm or leave to cool, then store in an airtight container for 2-3 days.
