Apple + Cinnamon Chia Pudding
This is one of my favourite chia puddings - creamy, cozy, and packed with warming spice. The fresh apple makes it feel like autumn in a jar, and it’s nourishing too.
Ingredients
Ingredients
- chia seeds
- unsweetened plant-based milk, we use soy
- maple syrup
- vanilla extract
- ground cinnamon
- ground nutmeg
- apple
- coconut oil
For serving (optional);
- plant-based yoghurt
- granola
- mixed nuts
Method
- 1
In a small bowl or container, combine the chia seeds, plant-based milk, 2 tsp of maple syrup, vanilla extract, 1 pinch of cinnamon, and nutmeg.
- 2
Grate half of the apple and stir it into the chia mixture. Taste and adjust with more maple syrup or spices if needed.
- 3
Cover and leave the pudding to set in the fridge for at least 2 hours or overnight.
- 4
When you’re ready to serve, slice the remaining apple into chunks. Add to a saucepan with the remaining 1 tsp of maple syrup, pinch of cinnamon, and the coconut oil. Cook over a medium heat for 8–10 minutes or until softened.
- 5
Spoon the chia pudding into a serving dish, then top with a dollop of yoghurt, warm stewed apple, and your favourite toppings such as granola or nuts.
