Black Bean + Date Brownies
Rich, fudgy and deeply chocolatey, these brownies are made with black beans, dates and avocado, but you'd never know it.
Ingredients
Ingredients:
- Medjool dates, stones removed
- tins of black beans, drained + rinsed
- avocado, peeled + stone removed
- coconut oil
- cacao powder
- baking powder
- vanilla extract
- maple syrup
- black strap molasses
- 70% dark chocolate, roughly chopped
- sesame seeds
- flaky sea salt
Method
- 1
Place the dates in a bowl and cover with boiling water. Leave to soak for 10 minutes.
- 2
Meanwhile, preheat the oven to 180°C fan / 200°C / 390°F and line a 23cm (9") square brownie tin with baking paper.
- 3
Add the black beans, avocado, coconut oil, cacao powder, baking powder, vanilla extract, maple syrup and black strap molasses to a food processor.
- 4
Melt the chocolate in a heatproof bowl set over a saucepan of gently simmering water, stirring occasionally, until smooth.
- 5
Drain the dates and add them to the food processor. Pour in the melted chocolate and process everything until smooth and combined. The mixture will be thick and sticky which is fine.
- 6
Transfer the brownie mixture to the lined tin and spread it out evenly with a spatula. Sprinkle the sesame seeds all over then bake for 30-40 minutes until set on top but still with a slight softness inside when touched.
- 7
Remove from the oven and leave to cool in the tin for at least 45 minutes before slicing. Sprinkle with flaky sea salt then slice into 16 squares.

“We’re pretty surprised about the taste! the black beans nicely absored the chocolate and cacao powder. Definitely making them again. our note to self: we didn’t own a “small” oven tray, so the size (height) of our brownies was quite small. We’re redoing them next time either with a bigger volume, or a smaller.”
