Fruit + Nut Chocolate Bars
These chocolate bars are my new favourite snack! Raisins, nuts, seeds and dark chocolate bring lots of healthy fats, protein and plant-based iron - making them a great energy-sustaining treat in the middle of the afternoon.
Ingredients
Ingredients
- buckwheat groats, rinsed
- pumpkin seeds
- almonds
- hazelnuts
- 70% dark chocolate
- coconut oil
- raisins
- maple syrup
Method
- 1
Line the base and sides of a loaf tin with baking paper. Preheat the oven to 160°C fan and line a large baking tray with baking paper.
- 2
Add the buckwheat, pumpkin seeds, almonds and hazelnuts to the tray and roast for 15-20 minutes, until lightly golden and fragrant.
- 3
Remove from the oven and roughly chop the larger nuts into smaller pieces.
- 4
Melt the chocolate in a heatproof bowl set over a pan of gently simmering water. Stir in the coconut oil until smooth.
- 5
Add the roasted nuts and seeds to the melted chocolate along with the raisins and maple syrup and stir until well combined.
- 6
Transfer the mixture to the lined loaf tin and press it down firmly. Chill in the fridge for at least 2 hours, until fully set.
- 7
Once firm, remove from the tin and leave to sit at room temperature for around 20 minutes before slicing into 7 bars.

“Lovely. The dark chocolate feels extra indulgent as an after dinner guilt-free treat. The crunch is slightly too much for me, but I’ll just tone down the buckwheat next time.”
