Fluffy Maple Pancakes
We always top our pancakes with a splash of maple syrup but you can decorate them as you like. Fresh fruit and nuts are a favourite in our household, too.
Ingredients
Ingredients
- (1.66 cups) soy milk
- apple cider vinegar
- (2.5 cups) plain flour
- baking powder, see notes
- salt
- vanilla extract
- maple syrup, plus extra for decoration
- oil, for frying
Method
- 1
Combine the soya milk and apple cider vinegar in a small bowl. Stir then leave to sit while you carry out the next steps.
- 2
Combine the plain flour, baking powder and a pinch of salt in a mixing bowl.
- 3
Next add the vanilla extract, maple syrup and soya milk mixture from earlier. Stir to combine.
- 4
Drizzle a little oil in a non stick pan on a medium heat. Once hot, add 3 tablespoons of the pancake mixture to the pan and ease the mixture into a circle shape approx 10cm (4”) wide and fry for 2-3 minutes at a time. If the pan is big enough you can cook 2 pancakes at a time.
- 5
To serve, place the pancakes on serving plates and drizzle all over with maple syrup.
