Folded Nori Wrap
Think of this as a very loose, very westernised take on onigirazu - the Japanese sushi sandwich. It’s super simple and ready in 30 minutes. I use jasmine rice instead of sushi rice and it works brilliantly. Not traditional, but one of my favourite things to make for lunch right now.
Ingredients
Ingredients
- jasmine rice, rinsed
- water
- extra-firm tofu
- vegetable oil
- carrot
- avocado, peeled + stone removed
- sheets of nori
- sriracha sauce
- teriyaki sauce
- salt
Method
- 1
Add the rice and water to a saucepan. Cover and cook over a low-medium heat for around 15 minutes until the rice is cooked through. Transfer to a plate and leave to cool slightly.
- 2
Slice the tofu into rectangular pieces. Heat a splash of oil in a frying pan over a medium heat, then cook the tofu for a few minutes on each side until golden and crispy. Transfer to a plate and leave to cool slightly.
- 3
Slice the carrot lengthways into wide, flat strips and slice the avocado into long pieces.
- 4
Place the nori sheets on a flat surface. Use scissors to cut a straight line from the middle of the bottom edge to the centre of each sheet.
- 5
Divide the fillings between the two nori sheets, placing one filling in each square. We like to add the rice to the bottom right, tofu to the top right, carrot to the top left and avocado to the bottom left - this way the rice and tofu end up in the middle when folded, which gives the best structure.
- 6
Squeeze the sriracha over the rice and drizzle the teriyaki sauce over the tofu. Sprinkle a small pinch of salt all over.
- 7
To fold, start with the bottom right corner and work anti-clockwise - fold the rice on top of the tofu, then fold down onto the carrot, then finally onto the avocado. Press gently to secure and serve immediately.

“Very easy recipe. Added a splash of soy sauce when searing the tofu and some spinach and cucumber when folding. Loved it, making again for sure, although I'll definitely be experimenting with ingredients! 😉”
