Gochujang Tofu + Tahini Noodles
This is one of my favourite midweek meals. It’s a flavour-packed dinner that comes together in just over 30 minutes, featuring crispy gochujang-glazed tofu on top of creamy, ginger and lime noodles.
Ingredients
Ingredients
- block of extra-firm tofu, drained
- cornflour
- oil
- gochujang paste
- sesame oil
- soy sauce
- maple syrup
- sesame seeds
- sugar snap peas
- spring onion, sliced
For the noodles:
- tahini
- soy sauce
- lime, juice only
- fresh ginger, peeled + ginger
- quick cook udon noodles
Method
- 1
Slice the tofu into four rectangular pieces and add to a bowl with the cornflour and oil. Toss gently until coated.
- 2
Cook in an air-fryer for 15-18 minutes, turning halfway, until golden and crisp. Alternatively, bake on a lined tray at 180°C fan / 200°C / 400°F for the same time.
- 3
Meanwhile, prepare the gochujang sauce by mixing the gochujang, sesame oil, soy sauce, maple syrup and sesame seeds in a bowl. Set aside.
- 4
Bring a saucepan of water to the boil. Add the sugar snap peas and cook for 1 minute, then remove with a slotted spoon and set aside.
- 5
Add the noodles to the same saucepan and cook according to packet instructions, usually 3-4 minutes, until loosened.
- 6
While the noodles cook, whisk together the tahini, soy sauce, lime juice and ginger in a bowl. Add small splashes of water and stir until smooth and creamy.
- 7
Transfer the cooked noodles directly into the tahini sauce, adding a splash of cooking water to loosen if needed. Toss until fully coated.
- 8
Add the crispy tofu to the gochujang sauce and gently coat, then slice. Slice the sugar snap peas.
- 9
Divide the noodles between bowls and top with the tofu, sugar snap peas and spring onion. Spoon over any remaining gochujang sauce and serve immediately.
