Gooey Flourless Avocado Brownies
These heavenly brownies are gluten free, using healthy and creamy avocado to create the sticky, gooey texture that makes them so damn moreish.
Ingredients
Ingredients
- ground flaxseeds
- 70% vegan dark chocolate
- coconut oil, melted
- oats
- ripe avocados
- caster sugar
- almond butter or peanut butter
- vanilla extract
- cocoa powder
- baking powder
- salt
For the frosting:
- ripe avocados
- cocoa powder
- icing sugar
- coconut oil, melted
- vanilla extract
Method
- 1
Preheat the oven to 160°C fan / 350°F and line the base and sides of a 20cm (8”) square brownie tin with baking paper.
- 2
Next transfer the flaxseed along with 5 tablespoons of water to a small bowl and stir to combine. Leave to one side while you carry out the next step.
- 3
Place the chocolate and coconut oil in a heat-proof bowl and melt on a medium/low heat over a pan filled with a little water.
- 4
Add the oats to a food processor and process until fine. Then add the flaxseed mixture from earlier, the melted chocolate, and the avocados, sugar, almond or peanut butter, vanilla extract, cocoa powder, baking powder and a pinch of salt. Process until combined, scraping down the sides as you go.
- 5
Spoon the brownie mixture into the lined tin and level it out with a spatula. Bake for 30-35 minutes or until just set. Once the brownie is ready, leave it to cool in the pan for 10 minutes, then remove and allow to fully cool.
- 6
Next wipe out the food processor, add all of the frosting ingredients and process until smooth. Taste and add a little more icing sugar if you prefer it sweeter. Then spread the frosting all over the brownies and slice into squares.
