Hidden Veggie Pasta
Hidden vegetable pastas are one of our go-to meals when we want to cook a really easy and nutritious meal for the family. For this simple pasta, we roast the veggies until caramelised, then blend them into a gorgeous sauce, which our kids love.
Ingredients
Ingredients
- garlic bulb
- onion, sliced in half
- tomatoes, sliced in half
- carrots, sliced into chunks
- red peppers
- olive oil
- salt + pepper
- rigatoni pasta
- balsamic vinegar
- fresh basil
- silken tofu, drained
- vegan parmesan to top, optional
Method
- 1
Preheat the oven to 200°C fan / 220°C / 425°F.
- 2
Trim the top off the garlic bulb then add it to a large baking tray along with the onion, tomatoes, carrots and whole peppers. Drizzle all the veg with some olive oil and season with salt and pepper, then roast in the oven for 40 minutes.
- 3
Just before the veg is ready, cook the pasta in a pot of hot water for 10-12 minutes or until al dente. Once the pasta is cooked, remove the pot from the heat, drain the pasta and add it back to the pot.
- 4
Once the veg has finished roasting and is cool enough to touch, peel and discard the skins off the garlic and onion, then remove and discard the green tops and the seeds from the red peppers.
- 5
Add the garlic, onion and red peppers to a blender along with the tomatoes, carrots, balsamic vinegar, basil and silken tofu, then blend until smooth.
- 6
Pour the red sauce into the pot with the pasta and heat on low for a few minutes until hot.
- 7
Serve the red pasta between bowls and sprinkle with vegan parmesan if you like.
