High Protein Quinoa Porridge
I love using quinoa as a base for porridge when I want something a little different from oats. It cooks down into a creamy, pudding-like texture and makes a breakfast that’s naturally high in fibre, protein and iron.
Ingredients
Ingredients:
- uncooked quinoa, rinsed
- water
- unsweetened soya milk
- chia seeds
- ground cinnamon
- pear, peeled + grated
- peanut butter
- hemp seeds
- pumpkin seeds
- maple syrup
- large orange, sliced
For the chia jam:
- frozen strawberries
- chia seeds
- maple syrup
Method
- 1
Add the quinoa, water and half of the soya milk to a saucepan. Bring to a gentle simmer over a medium heat and cook for around 15 minutes, stirring occasionally, until the quinoa is tender and the mixture has thickened.
- 2
Meanwhile, add the strawberries, chia seeds and maple syrup to a small saucepan. Simmer for 5-10 minutes until the strawberries have softened and broken down. Mash with the back of a fork for a smoother texture if you prefer. Set aside to thicken.
- 3
Return to the porridge and stir in the chia seeds, cinnamon, chopped pear and remaining milk. Simmer for a further 2-3 minutes, until thick and creamy.
- 4
Spoon into bowls and top with peanut butter, a spoonful of chia jam and a drizzle of maple syrup. Finish with hemp seeds, pumpkin seeds and sliced orange.
- 5
Store any remaining jam in an airtight container in the fridge for up to 1 week.

“I’m not a breakfast person but this hit the spot. I didn’t make the jam but used fresh fruit instead and it tasted incredible. felt full for longer than usual. will make again and maybe try the jam!”
