Hot Maple Tofu Bowl
This bowl uses a few more ingredients than we usually include in a recipe, but trust us - it’s totally worth it. Each component brings something different - crispy tofu, roasted sweet potato, a fresh red pepper salsa, creamy tofu ‘cottage cheese’ and a warm maple chilli dressing. It’s bold, nourishing and full of flavour.
Ingredients
Ingredients
- block of extra-firm tofu, we use smoked
- reduced-salt soy sauce, or tamari
- all-purpose seasoning
- nutritional yeast
- olive oil
- sweet potato, chopped
- smoked paprika
- salt + pepper
- roasted red peppers from a jar, rinsed + chopped
- red onion, finely chopped
- fresh parsley, chopped
- lemon, juice only
- silken tofu
- white miso paste
- plant-based yoghurt, we use Greek-style
- mixed salad leaves, see tips
- avocado, sliced
For the hot maple dressing:
- maple syrup
- chilli flakes
- apple cider vinegar
Method
- 1
Preheat the oven to 200°C fan / 220°C / 425°F.
- 2
Crumble the tofu into small pieces directly into a mixing bowl. Add the soy sauce, all-purpose seasoning, nutritional yeast and a drizzle of olive oil. Stir well, then spread onto a lined baking tray.
- 3
Add the sweet potato to another tray with the smoked paprika, a small pinch of salt and pepper and a drizzle of olive oil. Toss well.
- 4
Roast both trays for 20-30 minutes, stirring halfway, until the tofu is crispy and the sweet potato is tender. The tofu may cook a little faster, so you can remove it from the oven first and leave the sweet potato to finish roasting if needed.
- 5
Meanwhile, make the salsa. Add the red peppers, onion, parsley, juice from 1/4 lemon and a small pinch of salt and pepper to a bowl. Stir well and set aside.
- 6
In another bowl, whisk the miso paste with the juice from the remaining 1/4 lemon. Add the silken tofu and yoghurt and whisk gently until combined into a soft, cottage cheese-like texture.
- 7
To assemble, divide the salad leaves between bowls, followed by the roasted sweet potato, crispy tofu, red pepper salsa, tofu ‘cottage cheese’ and avocado.
- 8
For the dressing, add the maple syrup and chilli flakes to a small saucepan and quicklu bring to a gentle simmer. Remove from the heat and stir in the apple cider vinegar.
- 9
Drizzle the warm maple dressing over the bowls and serve immediately.
