Iron-Packed Berry Overnight Oats
I make these overnight oats on repeat at the moment. The base is creamy and filling, the pink berry sauce blended with silken tofu gives it a really smooth, mousse-like texture. And the best part is there’s about 7mg of iron per serving.
Ingredients
Ingredients
- oats
- chia seeds
- pumpkin seed, plus extra to serve
- hemp seeds
- frozen strawberries
- frozen raspberries
- unsweetened soya milk
- silken tofu
- vanilla extract
- unsweetened soya yoghurt
- Medjool date, (optional)
For the chia jam:
- frozen strawberries
- maple syrup
- chia seeds
Method
- 1
In a small jar combine the oats, chia seeds, pumpkin seeds and hemp seeds.
- 2
In a blender combine the frozen strawberries, frozen raspberries, soya milk, silken tofu ,vanilla extract and date (if using). Blend until completely smooth. Add an extra splash of milk if needed to loosen up the mixture.
- 3
Pour the pink berry sauce over the dry oat base and stir well, making sure no dry pockets remain at the bottom. Seal the jar and refrigerate for at least 2 hours or ideally overnight.
- 4
To make the chia jam, add the frozen strawberries to a small saucepan over a medium heat and cook for 5 minutes, stirring and mashing occasionally, until the strawberries have broken down and become jammy. Stir in the chia seeds and maple syrup and mix well.
- 5
Remove the jam from the heat and mash with a fork to your preferred consistency.
- 6
Leave to cool for 5 minutes then transfer to a jar or container. The chia seeds will continue to thicken the jam as it cools. You can make it the night before and store it in the fridge.
- 7
In the morning, transfer half of the overnight oats to a serving glass then top with a dollop of yoghurt, some strawberry jam and repeat the 3 layers again. Enjoy!
