Lattice Fruit Pie
We just love the simplicity of this dessert. Mix fruit with sugar and spices, then wrap in shop-bought pastry for a easy yet totally delicious fruit pie.
Ingredients
Ingredients
- block of vegan shortcrust pastry, or gluten-free pastry
- apples, sliced 1cm thick
- ripe pears, sliced 1cm thick
- blackberries
- caster sugar
- ground cinnamon
- ground ginger
- plain flour, or gluten-free flour
- plant-based milk, for brushing
- vegan ice cream, to serve (optional)
Method
- 1
Preheat the oven to 180°C fan / 400°F.
- 2
Add the fruit, sugar, cinnamon, ginger and flour to a bowl, then mix.
- 3
Slice 2/3 off the pastry block. Roll out the dough large enough to cover the base and sides of a pie dish (we use a 22cm / 9” dish).
- 4
Line the bottom and sides of the dish with the rolled out pastry. Pour the fruit mixture into the dish.
- 5
Roll the remaining 1/3 of dough a few millimetres thick. Slice into 1cm (0.4”) strips. Overlap the strips of pastry on top of the fruit to create a lattice pattern and pinch the ends into the edge of the tart. Trim any excess overhang of pastry.
- 6
Brush the pastry with plant-based milk, then bake for 35-45 minutes until the pastry is golden.
- 7
Leave for 20 minutes before serving with vegan ice cream.
