Kidney Bean ‘Meatball' Hummus Bowl
This bowl is packed with protein and fibre thanks to the kidney beans and hummus. It’s also really satisfying with olive tapenade adding a rich, savoury depth to ‘meatballs’, which I also serve with warm flatbread and a super easy parsley dressing. Yuuuum!
Ingredients
Ingredients
- red onions, peeled
- lemon, juice only
- salt + pepper
- tins of kidney beans, drained + rinsed
- walnuts, chopped
- fresh parsley, finely chopped
- black olive tapenade, see tips
- dark soy sauce
- ground cumin
- panko breadcrumbs
- olive oil
To serve:
- fresh parsley, finely chopped
- garlic clove, peeled + finely chopped
- lemon, zest + juice
- hummus, see tips
- flatbread, lightly toasted + sliced
- cucumber, chopped
Method
- 1
Thinly slice half a red onion and add to a bowl with the lemon juice and a pinch of salt. Toss and set aside to lightly pickle.
- 2
Preheat the oven to 180°C fan / 200°C / 400°F.
- 3
Pat the beans dry with a clean kitchen towel, then transfer to a large bowl and mash until mostly smooth, with no whole beans remaining.
- 4
Finely chop the remaining onion and add to the bowl along with the walnuts, parsley, tapenade, soy sauce, cumin, breadcrumbs, a pinch of salt and pepper and a drizzle of olive oil. Mix well until fully combined.
- 5
Shape into 16 even balls and transfer to a lined baking tray. Brush lightly with oil and bake for 25 minutes, turning halfway. Be gentle when turning as they can stick slightly. The balls may feel a little soft when they come out of the oven, so leave them to sit for 4-5 minutes to firm up before serving.
- 6
Meanwhile, make the dressing by combining the parsley, garlic, lemon zest, lemon juice and a pinch of salt and pepper in a bowl. Add enough olive oil to loosen it into a spoonable dressing.
- 7
If making your own hummus (see tips), prepare it now.
- 8
To serve, spoon the hummus into bowls, then add the flatbread, cucumber, ‘meatballs’ and pickled red onion, and spoon over the parsley dressing.
