Miso Glazed Brussels Sprouts
Brussels sprouts can be very divisive and the truth is not everyone has to like them! But if you’re even just a little bit swayed by the way of the sprout, then our latest miso glazed version might just be your new favourite way to enjoy them - at Christmas or otherwise.
Ingredients
Ingredients
- Brussels sprouts, cleaned + halved (see notes)
- olive oil
- salt + pepper
- white miso paste
- maple syrup
- red wine vinegar
- garlic clove, peeled + finely chopped
- chilli flakes, plus extra for topping
Method
- 1
Preheat the oven to 200°C fan / 425°F.
- 2
Add the halved sprouts to a large baking tray. Drizzle with a generous splash of olive oil, then season well with salt and pepper. Mix well, then place the sprouts cut side down on the tray and roast for 20-25 minutes or until golden brown and the leaves are crispy.
- 3
Meanwhile, combine the miso, maple syrup, vinegar, garlic, chilli flakes, 1 tablespoon of olive oil and 2 tablespoons of water in a mixing bowl, then set aside.
- 4
When the sprouts have a few minutes to go, add the miso mixture to a pan on a medium heat and cook it until it begins to bubble, stirring frequently. Keep cooking for another 30 seconds or so until it thickens slightly into a runny glaze (note: be careful not to cook the glaze too long because the syrup will harden), then set aside.

Transfer the roasted sprouts to a serving bowl, then pour the glaze all over. Mix well with a spoon, then top with extra chilli flakes to serve. Enjoy!
