Miso Mushroom Kebabs With Whipped Tofu

Rich, savoury and packed with umami, I use miso and BBQ spices to coat the oyster mushrooms, which are then gently charred in a griddle pan. Served on a bed of whipped tofu for protein and with a fresh salad, this is a really satisfying plate that comes together in 30 minutes.

Ingredients

1 people

For the tofu:

  • silken tofu
  • garlic clove, peeled
  • lemon, juice only
  • nutritional yeast
  • salt + pepper

For the kebabs:

  • oil, plus extra for grilling
  • miso paste, we use brown-rice miso
  • bbq seasoning mix
  • tomato purée
  • maple syrup
  • oyster mushrooms

To serve:

  • tomatoes, chopped
  • cucumber, chopped
  • fresh parsley, finely chopped
  • lemon, juice only
  • flatbreads, toasted (or GF flatbreads)

Method

  1. 1

Drain as much water out of the tofu as possible, then add to a blender with the garlic, lemon juice, nutritional yeast and small pinches of salt and pepper. Blend until smooth and set aside.

  2. 2

Combine the oil, miso, BBQ seasoning, tomato purée, maple syrup and a pinch of pepper in a mixing bowl. Stir in a splash of water until it resembles a thick, loose paste.
