Oatmeal Pancakes
We use blended oats and wholemeal flour to give these simple pancakes a healthy twist. Serve with blackberries or your favourite fruits.
Ingredients
Ingredients
- plant-based milk, we use oat
- apple cider vinegar
- oats
- wholemeal flour
- baking powder
- salt
- maple syrup, plus extra to finish
- blackberries
- coconut oil
Method
- 1
Add the milk to a measuring jug, then add the vinegar and stir. Set aside for 3 minutes.
- 2
Meanwhile, place the oats into a blender and blitz until fine.
- 3
Add the blitzed oats to a large bowl, then add the wholemeal flour, baking powder and a pinch of salt. Stir to combine.
- 4
Add the maple syrup to the milk mixture, and add this all into the dry mix, then whisk.
- 5
Roughly chop 1/4 of the blackberries, mix them into the batter, then set it aside for a few minutes.
- 6
Drizzle some oil into a non-stick frying pan on a medium heat. As soon as the oil is hot, add 2 heaped tablespoons into the pan and use the back of a spoon to shape the batter into a round pancake (you will need to work in batches). Cook on a medium heat for 1-2 minutes on each side, until golden in colour.
- 7
Serve with the remaining whole blackberries on the side, and drizzle over some more maple syrup.
