One Pan Lentil + Gnocchi Bolognese
I’m a big believer in one-pan meals. They make life so much easier and I serve this one-pan bolognese with a delicious tofu cream cheese - which packs this dish with 25g of protein per serving and a good amount of fibre.
Ingredients
Ingredients
- olive oil
- onion, peeled + finely chopped
- carrot, finely chopped
- celery, finely chopped
- garlic cloves, peeled + finely chopped
- tin of whole tomatoes
- tomato purée
- red wine vinegar
- fresh rosemary, finely chopped
- pouches of cooked green lentils, see notes
- salt + pepper
- gnocchi, see notes
- fresh basil, leaves picked
For the tofu cream cheese:
- cashews
- silken tofu
- plant-based yoghurt, we use Greek style
- lemon, zest only
Method
- 1
First, add the cashews to a bowl and cover with hot water from a kettle, then set aside for later.
- 2
Next, add a splash of olive oil to a large casserole pan or pot on a medium heat. Add the onion, carrot and celery, then cook for 8-10 minutes or until they begin to brown.
- 3
Add the garlic and cook for another 2 minutes.
- 4
Now add the tinned tomatoes - crushing them in your hand to break them up. Then fill the tin all the way up with water and add the water to the pan, along with the tomato purée, vinegar, rosemary, lentils and pinches of salt and pepper. Bring the sauce to a simmer and cook for 20 minutes, stirring occasionally.
- 5
Meanwhile, drain the cashews, then add them to a high-speed blender with the silken tofu, yoghurt, lemon zest and a pinch of salt. Blend until smooth, then set aside.
- 6
Finally, add the gnocchi straight to the pan and top up with about 120ml (1/2 cup) of hot water. Simmer for 4-5 minutes or until the gnocchi is tender, adding more hot water as you, if necessary.
- 7
To serve, top the bolognese with the tofu cream cheese, basil leaves, freshly ground black pepper and a drizzle of olive oil. Enjoy!
