One Tray Harissa + Bean Gnocchi Bake
This is one of those easy, ‘all in one’ tray bakes that’s perfect for feeding a crowd with minimal washing up. The gnocchi cooks in a smoky harissa tomato sauce with butter beans, olives and sun-dried tomatoes, then gets topped with creamy tofu ricotta for contrast.
Ingredients
Ingredients
- garlic cloves, peeled + diced
- tins of chopped tomatoes
- vegetable stock
- chilli flakes
- rose harissa paste
- gnocchi
- jar of butter beans
- kale, chopped
- sundried tomatoes, sliced
- Kalamata olives
- basil, leaves picked
For the tofu ricotta:
- firm tofu, drained
- lemon juice
- unsweetened soya milk
- nutritional yeast
- extra virgin olive oil
Method
- 1
Preheat the oven to 180C fan / 200C / 400F.
- 2
In a large ovenproof dish with high sides, add the garlic, chopped tomatoes, stock, chilli flakes, harissa, gnocchi, butter beans with their liquid, sugar and a few pinches of salt and pepper. Stir well to combine.
- 3
Bake for 30 minutes.
- 4
Remove the dish from the oven and stir through the kale, capers, sun-dried tomatoes, olives and basil. Return to the oven for a further 10 minutes, until the kale has softened and everything is bubbling.
- 5
Meanwhile, make the tofu ricotta. Press the tofu between your hands over the sink to remove as much liquid as possible. Add it to a high-powered blender with the lemon juice, milk, nutritional yeast, olive oil and a pinch of salt and pepper. Blend until smooth and ricotta-like, adding a little more milk if needed. Transfer to a bowl.
- 6
Spoon generous dollops of tofu ricotta over the gnocchi bake and serve immediately.

“I appreciate the nutritional balance of this meal, but flavors were a little underwhelming. Too much saltiness, perhaps, and too little depth of other flavor? Also, the gnocchi ended up very soggy, which I am not a fan of.”

“Made this for the first time two weeks ago.. really delicious comfort food dish with so much flavour. Making again for supper with friends this week.. I hope they all enjoy it as much as I did the first time..”

“Really love how easy this is and can see it becoming a regular in our house. Only thing is sugar and capers are missing from the ingredients list so had to guess how much of each!”
