Pumpkin Spice Pecan Granola
Pumpkin spice is the name given to a mix of cosy Autumnal spices (it doesn't actually contain pumpkin). This seasonal granola is the perfect treat in the morning and it'll store well for at least a couple of weeks.
Ingredients
Ingredients
- oats, or gluten free oats
- nuts, we use pecans + cashews
- sunflower seeds
- salt
- ground cinnamon
- ground nutmeg
- ground allspice
- coconut oil
- maple syrup
- raisins
- coconut flakes
Method
- 1
Preheat the oven to 180°C fan / 400°F and line a large baking tray with baking paper.
- 2
In a large mixing bowl combine the oats, nuts, sunflower seeds, salt, cinnamon, nutmeg, allspice, coconut oil and maple syrup and stir until fully combined.
- 3
Transfer the granola mixture to the lined baking tray and bake for 20-25 minutes, stirring halfway. Keep an eye on the nuts towards the end of the baking time to ensure they don’t burn.
- 4
Remove the tray from the oven and toss in the raisins and coconut flakes. Leave the granola to cool then transfer to an airtight container for up to 1-2 weeks.
