Spiced Chocolate Chai
This is our good friend Nikhil’s recipe, which is now our favourite chai recipe. It has a fiery kick from the peppercorns and ginger, which pair perfectly with the indulgent cocoa powder. Make sure you read our notes for tips which will help you make the perfect chai!
Ingredients
Ingredients
- (3/4 cup) water
- (1.75 cups) plant-based milk, we use oat
- cocoa powder
- maple syrup, see notes
- loose leaf black tea, or 2 English breakfast tea bags (see notes)
Spice mix:
- ginger, peeled
- cardamom pods
- cinnamon sticks
- peppercorns
- fennel seeds
- cloves
Method
- 1
Pound the spice mix ingredients a dozen or so times using a pestle and mortar (the cardamom pods should be broken and the remaining spices crushed into smaller pieces), then set aside.
- 2
Add the water, plant-based milk, cocoa powder and crushed spices to a large saucepan. Boil for 5 minutes.
- 3
Remove the saucepan from the heat, then stir in the maple syrup and loose leaf black tea (or tea bags). Steep for 4 minutes (leave the chai to ‘brew’ so the flavours all infuse).
- 4
Pass (pour) the chai through a fine mesh strainer either directly into cups or into a large bowl, then pour into cups. Enjoy!
