Sticky Gochujang Tofu Meal Prep
This is one of my favourite meal prep lunches at the moment. Sticky gochujang tofu, fluffy quinoa, tangy kimchi and pickled red cabbage, all drizzled with a creamy orange tahini sauce and boasting 7mg of iron per serving.
Ingredients
Ingredients
- quinoa, rinsed
- water
- extra-firm tofu, drained
- cornflour or cornstarch
- vegetable oil
- gochujang
- light soy sauce
- maple syrup
- rice wine vinegar
- water
- pickled red cabbage
- kimchi
- frozen edamame
For the tahini sauce:
- medium orange, juice only
- tahini
- lemon, juice only
- light soy sauce
- maple syrup
Method
- 1
Add the quinoa and water to a saucepan. Cook uncovered over a medium heat for 15 minutes until the water is absorbed and the quinoa is tender. Remove from the heat, cover with a lid and leave to steam while you carry out the next steps.
- 2
Toss the tofu in the cornflour until evenly coated.
- 3
Heat a little oil in a large frying pan over a medium-high heat. Add the tofu and fry for 8-10 minutes, turning occasionally, until golden and crispy on all sides.
- 4
Meanwhile, whisk together the gochujang, soy sauce, maple syrup, rice wine vinegar and water in a small bowl.
- 5
Combine all the tahini sauce ingredients in a separate bowl and stir until smooth. Add water a tablespoon at a time to reach a pourable consistency.
- 6
Pour the gochujang sauce into the pan with the tofu and stir until the tofu is evenly coated and sticky. Cook for another minute until the sauce thickens slightly.
- 7
Cook the edamame in boiling water for 2-3 minutes, then drain.
- 8
Divide the quinoa between 3 lunch boxes, then add the edamame, pickled red cabbage, kimchi and sticky tofu to each. Keep the tahini sauce in a separate container in the fridge. When ready to eat, drizzle the tahini sauce over and serve.
- 9
Store the lunch boxes in the fridge for up to 3 days.

“Amazing lunch to take to school! I love that I don’t have to think about my lunch for three days if I just make it. It’s also tasty of course!! I do struggle with making the tofu crispy, but that’s just a skill I need to work on I think😋”
