Tahini + Chocolate Banana Bread
Banana bread is a staple in our household but for this recipe we decided to shake things up. We add tahini for it's rich and nutty flavour which pairs perfectly with the natural sweetness from the bananas. And we also add chocolate chips for a burst of indulgence.
Ingredients
Ingredients
- ripe brown bananas
- olive oil
- maple syrup
- tahini
- vanilla extract
- plain flour
- bicarbonate of soda
- baking powder
- salt
- dark chocolate chips
Method
- 1
Preheat the oven to 160°C / 320°F fan-assisted and line a 2Ib loaf tin with baking paper. Peel the bananas discarding their skins, then add the flesh to a large mixing bowl and mash with a fork until smooth and runny.
- 2
Next add the olive oil, maple syrup, tahini and vanilla extract to the mixing bowl and stir until combined.
- 3
Then add the flour, bicarbonate of soda and baking powder along with a pinch of flakey sea salt and stir until incorporated.
- 4
Add half of the chocolate chips to the cake batter and stir until fully combined.
- 5
Transfer the cake batter to the lined loaf tin. Then run a knife down the middle of the cake batter to score a line approximately 1cm (¼”) deep.
- 6
Sprinkle the remaining chocolate chips all over the top and bake in the oven for approximately 50 minutes or until a toothpick comes out clean when inserted into the middle.
- 7
Remove the banana bread from the oven then lift it out of the cake tin and leave it to cool a little before slicing.
