Thai Red Curry Bowl With Crispy Tofu
This dish never fails to cheer me up. Crispy tofu is coated in Thai red curry paste and served over jasmine rice with a fragrant coconut broth, crunchy veg and a squeeze of lime. It’s full of bold, warming flavours and easy enough to make midweek.
Ingredients
For the tofu:
- Thai red curry paste
- dark soy sauce, or tamari for GF
- vegetable oil
- block of extra-firm tofu, drained
To serve:
- carrot
- sugar snap peas, thinly sliced
- salt + pepper
- lime
- thumb of fresh ginger, finely chopped
- garlic cloves, finely chopped
- Thai red curry paste
- low-salt vegetable stock
- fl oz, tin of coconut milk
- jasmine rice
- fresh coriander, leaves picked
Method
- 1
Preheat the oven to 200°C fan / 220°C / 425°F and line a baking tray with baking paper.
- 2
First for the tofu, in a bowl mix the Thai red curry paste, soy sauce and oil. Tear the tofu into bite-sized pieces directly into the bowl and toss to coat.
- 3
Transfer to the tray and roast for 20-25 minutes, stirring halfway, until crisp around the edges.
- 4
Meanwhile, combine the carrot and sugar snap peas in a bowl. Season with salt and pepper and add the juice of 1/4 lime. Toss and set aside.
- 5
Cook the rice according to packet instructions, then remove from the heat and keep covered.
- 6
Heat a drizzle of oil in a saucepan over a medium heat. Fry the ginger and garlic for 2 minutes until fragrant, then stir in the Thai red curry paste and cook for 1 minute.
- 7
Pour in the stock, bring to a gentle simmer, then add the coconut milk and heat through.
- 8
To serve, divide the rice between bowls, top with the crispy tofu and pour over the coconut broth. Add the carrot salad and coriander, then slice the remaining lime piece into two wedges and serve alongside.
