Tofu BLT Sandwich
In this recipe we bake thin strips of tofu in a marinade of soy sauce, smoked papirka and maple syrup to replciate the sweet / salty taste of bacon.
Ingredients
For the tofu 'bacon':
- firm tofu, drained + patted dry with kitchen paper
- low sodium soy sauce, or tamari for gluten-free
- smoked paprika
- maple syrup
- tomato purée
- olive oil
To serve:
- vegan mayonnaise
- wholemeal bread, or gluten-free bread
- vegan margarine
- tomato, sliced
- red onion, thinly sliced
- little gem lettuce leaves
Method
- 1
First, press the tofu if needed. Then cut the tofu into 3mm (⅛”) thick slices and place in a shallow dish in a single layer.
- 2
Combine the soy sauce, smoked paprika, maple syrup, tomato purée and olive oil, then pour over the tofu slices, ensuring they are all coated. Cover the dish and leave in the fridge to marinate for at least 1 hour.
- 3
Preheat the oven to 200°C Fan / 425°F and line a large baking tray with baking paper.
- 4
Put the tofu slices on the tray in a single layer and brush with any remaining marinade. Bake for 15–20 minutes, turning the slices over once. Keep an eye on the tofu so it doesn’t burn.

To build the sandwich, butter the bread with vegan margarine, then spread with mayo and top with slices of tomato, red onion, tofu bacon, and lettuce leaves.
