No Bake Apple Crumble
This 15 minute twist on the classic apple crumble pudding is brilliant if you want a speedy after dinner treat. Alternatively you can make these in advance and store in the fridge for up to 1 day before serving.
Ingredients
Ingredients
- Bramley apples, peeled, cored + cut into 2cm chunks
- ground cinnamon
- lemon, juice only
- soft brown sugar
- vegan yoghurt, (we use oat)
- ginger biscuits, crushed
Method
- 1
Put the apples into a saucepan, add in the cinnamon, lemon juice and sugar, along with 1 tablespoon of water, then stir.
- 2
Put on a lid and cook on a low-medium heat for around 10 minutes, stirring occasionally, until you can easily pierce through the apples with a knife, but they are still holding their shape.
- 3
Place some of the apple mix in the bottom of four glasses, followed by some yoghurt, and finally crumble over some of the crushed biscuit. Repeat this whole step once more, so you have two layers in each glass, then serve.
